I finally got my first duck. It was a good time, and I was surprised with how tender the meat is compared to goose or turkey.

Are these just the breasts or the whole bird after skinning?

Try smoking them! And remember that fowl is to be cooked to rare or a little more. After that it gets really chewy. I grew up eating wild duck and goose. I can't tell you how many thousands of these we ate.

Another good way to keep them moist is to cut them up into nugget size chunks and pan fry them.

    Congrats on your successful hunt!
I LOVE Roast duck especially with the skin on and crispy, a heart attack waiting to happen but what a way to go! ;)

You'll live longer eating roast duck than you will eating the lite sandwiches at Subway.
