Lazy day today. Well, that’s what I am hoping for anyway. You Married folks know How that goes. Hot outside but it’s cool and dark in the house. Beer is cold and most of the chores are done. I could probably mow the lawn right now but did I mention it’s hot?

About 9:00 this morning I put the coffee on and also the pork ribs. They have been running on the pit about four hours at 225-250. I am shooting for a 4:00pm dinner which should make them slightly less than fork tender and not quite falling off the bone.the chunk hickory is cooling down to charcoal on its own with just the right touch of smoke. The water bath will help.
This is how they look now.
