    I finally got my first duck. It was a good time, and I was surprised with how tender the meat is compared to goose or turkey.

    Try smoking them! And remember that fowl is to be cooked to rare or a little more. After that it gets really chewy. I grew up eating wild duck and goose. I can't tell you how many thousands of these we ate.

    Another good way to keep them moist is to cut them up into nugget size chunks and pan fry them.
