I am looking for a video camera for outdoor how to videos and hiking trips.

Good audio is a must for the how too videos.

What are you guys using out there?

I use a Canon M50 that i bought a year ago. Great for youtube videos. Example is my channel although I am still learning to use it effectively. ( The Recluse Woodsman ) for better audio I use a shotgun type mic. As a DSLR, the downside is it's size makes it harder to pack

Had been using an iPhone 5s for my videos and have recently upgraded to a GoPro HERO 7 Black and iPhone XR (no videos with those yet though).

I've been looking at the external mics, early complaint I had on my early videos (The "Modern Minuteman") was the sound could be low at times. Does the Mic help with wind baffling?

Yes the mic with a dead cat wind sock helps a lot with wind noise

The Panasonic Lumix G7 micro four-thirds camera is durable and inexpensive. It is used by a number of YouTubers due to its video features and quality. I have used mine for two years, mostly for stills.

How about a link to your channel? I’ve been toying with getting an external mic for my iPhone 5 and just using that.

Since my post I made two videos with the XR and the rest are all with the 5s. Never really felt the need for an external mic but I'm sure it's a good investment.
