DIY Knife scale question

I am rehandling a knife with a full tang, but there is space between the top of the tang and the spine of the blade, so I need to back fill that.

Due to lack of tools right now, I am using a 1 piece handle from red oak. I have it dadoed to fit the blade and I'm fitting it by hand with sandpaper. Planning inner scales of a red plastic coffee container and pinned with copper tubing (5/16) in four places.

My plan is to fit the handle to the tang with liners so it is a snug fit, then pin with the tubing and assemble with no adhesives. After shaping and finishing it'll get a BLO soak to seal the wood.

Does this sound...sound? I don't see why it shouldn't work, but it's been decades since I did a rehandle and I adhered those with liquid steel epoxy...and I've only done that one (aside from gluing SAK scales back on).

I might suggest against the plastic folgers material. It may work fine and you may like it fine. The problem that I have seen, and I am kind of picky about things like this on my gear, is that the plastic can gouge out and is not very durable. In a small enough piece it may never be an issue but if you can avoid it now it may make life easier down the road.

Gasket material (available at auto parts stores) is a bit better choice in my opinion.

As far as not using adhesive, not sure why you wouldn't. Once you get the fit you want, make it permanent. Over time the "snug fit" will likely loosen up and the adhesive will prevent that. It's a low cost (about $4 for a two part epoxy) safeguard against your tool coming apart when you need it.
