I was at the supermarket earlier today and they had a sign posted by the instant mashed potatoes basically stating due to poor weather there was a dehydrated potato shortage and they were limited to what they currently had in stock. I picked up five boxes even though I really don't care for plain instant mashed potatoes. I figured I could use it to stretch flour or baking mix. When I got home I searched around, but couldn't find any information other than about general potato shortages. Has anyone else heard anything? In any case I thought I'd pass it along in case anyone does store dehydrated potatoes.

buy at sams or similar type place trust me we use them in restaurants all the time ain't no shortage

less you want little portions or something already packaged.

I worked at a mexican rest. many many years ago, and was told that they mixed it with their ground beef to strech it. I don't know if this is true or not, just something that I was told.

You can always make your own if you have a dehydrator and a food processor. I do it all the time, and its about 1/10th the cost of buying it at the store.
