After capping our latest batch this afternoon, I thought I'd try to find out how many people here like the stuff, too. I found a thread in another forum that sounds like a lot of people share our taste for it.
It's a very stable food store, too. If it's done right, the longer it sits on the shelf, the better it tastes.

We make ours very simple:
chunks of cabbage
vinegar
sugar
salt
green onions
minced garlic
diced peppers
shredded horseradish
cayenne powder

My next batch is going to be onion KimChi using sweet onions instead of cabbage.

I'd like to hear some other recipes.

If you DON'T like KimChi, that's okay. I won't tell you how I feel about Lima beans, either. ;)

Worked for a Korean company for several years and the owner was always taking us out for Korean food. Love grilled Kim Chi when we went for Korean BBQ. That, some grilled pork belly, sam jam and pickled jicama slices and I'm in heaven.
 
I used to like most of the dishes my childhood friend's Korean mother made me. Curry rice, Kimchi, and various other Indian/Asian foods.

I love me some good Kraut so I'd imagine I'd still enjoy it:D

Okay, that got my attention. You mean like shoveled around on a flat-top and served cooked, and hot? :confused:

Yep. It tastes different when it cooked on a grill like that. Gets a smokey flavor to it. My mouth waters just thinking about it. I wish there was a good Korean BBQ place in Phoenix.
 
I love the stuff. I was turned on to it by a friend who served in Korea and have been a fan every since. He has a Korean wife and she really makes it great. There is also a little store nearby that sells the stuff. I stop there and get a jar for lunch once in a while.
 
I am not allowed to eat the stuff in the house now, apparently it has bad smell but who knows.

My father put me on the stuff years ago, never had it home made though, only store bought stuff from the mini china town we have local. I am a big fan of it though, when I can eat it, that is.

I have absolutely never heard of that, over seas, or state-side. Could be interesting. Sure it was KimChi?
 
Yes it was Kim Chi. The waitress put it right on the grill built into the table top and it was cooked along with the meat.
 
My fiance is half korean and I love it when her mom comes to the states to visit because I get fresh Kim-chi all the time.. along with radish kim-chi, kim-chi fried rice, kim-chi soup, and so on and on... I love Kim-chi, no matter how you make it..
 
i have yet to try it ... that i know of .... i do like other pickled or some fermented items .. so may have to make up a small batch and see what i think ... don't know of any local place that sells it...
 
There is a cooking show on PBS locally here called The Kim Chi Chronicles. Features all sorts of Korean cooking, though they haven't mentioned dog yet. (Yes Koreans eat dog)

I just found a recipe for kimchi stir-fry chicken. I guess I've been missing out on something. I know it's used in stews and soups, but fried could be interesting.

fried kim-chi is very good too.. I wish my fiance's mom would come back for a visit.. :D
 
I love Kim-chi. Like a previously poster, my home consumption is frowned upon. There is a little market not far from home where the owners wife makes kimchi for sale. Pretty cheap, and pretty good. She always tells me " Bring back jar!"

She makes some with green onions that looks very good too. I noticed that Costco had Kimchi too!

They only place I would buy kimchi is from a asian market or Asian store...
 
Potato Chicken Soup that sounds really good!

It's one of my wife's signature dishes, and a staple around our house. But daughter never paid attention when it was being built.

Kids these days are like baby birds. "Feed me! Feed me! I don't wanna know how to catch worms, just feed me!" Grrrrrr.........
 
North Koreans!!!

Nope, South Koreans too. They actually have these restaurants that raise dogs specifically for consumption, kind of like little ranches, but for dogs, not cattle. You go out back and select the dog you want to eat. They are mutts, no more than 6 months old and they all have ear tags. When they bring it to you table the ear tag is on the plate to show you got the right dog. It's only eaten once a year or so and they believe it has health benefits. As far as I know, they don't do it here in the states per public opinion would not be favorable. We eat some things other cultures find wierd and probably disgusting (think McDonalds :4:). Some native Americans used to really enjoy mountain lion, mules and beaver.
 
I had a Korean friend whose mom made some kick butt KimChi, I've never tried making my own but I will....
