Quinoa - Super easy Carbs and Protein

Search revealed this wonder grain had been mentioned, but I didn't see it's own thread. For those who know about it, post up your recipes. For those who don't let us know what you think.

Prepare it by boiling water, add Quinoa then simmer for about 15min. Ratio 2c Water to 1c Quinoa.

This is truly a grain everyone should try. 64g Carb and 14g Protein in 3.5oz of dried qunioa. That's one half cup! Quinoa has 3g less protein per ounce when compared to your average meat and fish.

Quinoa has a taste unique to itself. I have been unable to liken it to anything, so you must try it. I only like white Quinoa, the other colors tend to be too bitter.

Things I add Quinoa to (limiting list to things I would pack on a trail):

Rice and beans
Eggs
Bannock
Tuna and Crackers

I mainly eat it by itself on the trail. It's good cold, lukewarm or hot.

Add some olive oil for flavor, body, and essential fats.

Other roots and vegetables can be cooked into it as well.

Otherwise, it's easy to add to other meals in lieu of rice or couscous.

Think it goes better with salty type stuff than sweet. Butter n salt n pepper is one of my favs. Otherwise I put it in most anything: soups, stews, casseroles, on pasta with whatever sauce it's gettin that day, Asian, Indian, etc.

What prices are people paying? Goes for $4-5/lb around here though I've a friend who says they've seen $3/lb.
 
there's more than one kind? (light vs dark)... my wife tries to feed it to me, but as you said, it's bitter... might suggest she try the light kind. i might like it. didn't realize it was that nutritious.
 
My gal makes a great Tabouli salad replacing the bulgar wheat with cooked Quinoa. Millet and amaranth also two nutritious high protein grains that are neglected.
 
I heard about this grain last year. It's a staple in the diet of the inhabitants of the Andes! They have to stay warm!

For me it is butter, salt and pepper. I also like it with a little vinegar and sugar and dill, but that's just me. You can do about anything you would do with pasta with it.

I keep hearin' great things but haven't played with it yet since it's so much more $$$ than the grains and legumes I normally work with. I guess I'll suppress my inner miser long enough to snag a pound....
 
I add 1 can of diced tomates, drained, 1 smal clove of baked garlic, crushed and a finely diced stalk of celery and serve in warmed tortillas
 
I take raw uncooked quinoa and boil it like oatmeal. Then put a bit of milk, sugar and cinnamon on it. Taste just like oatmeal.
 
I made a chocolate cake with it once. Very good!

"Quinoa Chocolate Cake
Not only does this cake contain no wheat, it contains no flour – made with cooked quinoa (rather than quinoa flour), it has a dense, moist texture and intense chocolate flavour. Excerpted from Quinoa 365 by Patricia Green and Carolyn Hemming (Whitecap)
2/3 cup white or golden quinoa
1 1/3 cup water
1/3 cup milk
4 large eggs
1 tsp. pure vanilla extract
3/4 cup butter, melted and cooled
1 1/2 cups sugar
1 cup cocoa powder
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
Bring the quinoa and water to a boil in a medium saucepan. Cover, reduce to a simmer and cook for 10 minutes. Turn off the heat and leave the covered saucepan on the burner for another 10 minutes. Fluff with a fork and allow the quinoa to cool.
Preheat the oven to 350°F. Lightly grease two 8-inch round or square cake pans. Line the bottoms of the pans with parchment paper.
Combine the milk, eggs and vanilla in a blender or food processor. Add 2 cups cooked quinoa and the butter and continue to blend until smooth.
Whisk together the sugar, cocoa, baking powder, baking soda and salt in a medium bowl. Add the contents of the blender and mix well. Divide the batter evenly between the 2 pans and bake on the center oven rack for 40 to 45 minutes or until a knife inserted in the center comes out clean. Remove the cake from the oven and cool completely in the pan before serving. Frost if desired. Store in a sealed container in the refrigerator for up to 1 week or freeze for up to 1 month. Serves 8-16."
 
Quinoa is actually a seed, rather than a grain. My favorite way to eat is to prepare with vegetable broth instead of water. Once the broth has been absorbed into the quinoa, add toasted, slivered almonds and feta cheese. We pack this a lot for day trips because it can be eaten at any temp.
 
I have never heard of it but would be willing to try it. There isn't much of anything I won't try as long as it doesn't have stuff like mayonnaise or sourcream in them. The simple butter, salt and pepper would be what I'd start with.
 
The plain stuff on the left i boil up and eat like oatmeal. (Acme)
